Ingredients

  • 1 cup plain unsweetened yogurt
  • 1/2 cup Lizi's Low Sugar Granola (or any other low-sugar granola)
  • 500 g mixed berries (e.g., blackberries, blackcurrants, raspberries, red currants)
  • 1/2 cup water
  • 1 tsp vanilla essence
  • 3 tbsp chia seeds

Method

  1. To make the chia jam, combine the berries and water in a saucepan and bring to the boil.
  2. Stir in the vanilla essence, then reduce the heat and simmer for 5 minutes.
  3. Remove from the heat, stir in the chia seeds, and allow to set for 30 minutes to cool and thicken.
  4. To assemble the parfaits, layer plain yogurt evenly into two glasses.
  5. Top each with 2 tablespoons of chia jam.
  6. Finish with a layer of granola and serve immediately or refrigerate for later.
