Ingredients
- 1 cup plain unsweetened yogurt
- 1/2 cup Lizi's Low Sugar Granola (or any other low-sugar granola)
- 500 g mixed berries (e.g., blackberries, blackcurrants, raspberries, red currants)
- 1/2 cup water
- 1 tsp vanilla essence
- 3 tbsp chia seeds
Method
- To make the chia jam, combine the berries and water in a saucepan and bring to the boil.
- Stir in the vanilla essence, then reduce the heat and simmer for 5 minutes.
- Remove from the heat, stir in the chia seeds, and allow to set for 30 minutes to cool and thicken.
- To assemble the parfaits, layer plain yogurt evenly into two glasses.
- Top each with 2 tablespoons of chia jam.
- Finish with a layer of granola and serve immediately or refrigerate for later.
