Ingredients

  • 4 x 100g salmon fillets
  • 1 lime (sliced)
  • 1/2 tsp chilli flakes
  • 2 tbsp olive oil (1 tbsp for salmon, 1 tbsp for dressing)
  • salt and pepper (to taste)
  • 100 g soba noodles
  • 2 tbsp sesame oil (1 tbsp for noodles, 1 tbsp for dressing)
  • 1/2 head green cabbage (finely shredded)
  • 2 medium carrots (grated)
  • 4 spring onions (thinly sliced)
  • 3/4 cup edamame beans (shelled, cooked, and cooled)
  • 1 bunch coriander (roughly chopped)
  • 2 tbsp roasted unsalted peanuts (chopped)
  • 2 tbsp rice wine vinegar
  • 1 tbsp reduced salt soy sauce
  • 1 thumb ginger (juiced or finely grated)
  • 1 clove garlic (minced)
  • 1 tsp honey
  • 1 tbsp peanut butter (no added sugar)
  • 1 lime lime juice
  • 1/2 tsp chilli flakes (optional for dressing)

Method

  1. Preheat oven to 180°C fan bake. Place salmon fillets on foil, drizzle with olive oil, season with salt, pepper, and chilli flakes, and top with lime slices. Wrap and bake for 18 minutes until cooked.
  2. Boil soba noodles for 5 minutes, drain, rinse under cold water, then toss with 1 tbsp sesame oil.
  3. Combine shredded cabbage, grated carrots, sliced spring onions, cooked edamame beans, chopped coriander, and peanuts in a large bowl.
  4. Whisk together rice wine vinegar, soy sauce, toasted sesame oil, olive oil, ginger, garlic, honey, peanut butter, chilli flakes and lime juice until smooth.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Divide the salad between bowls, add a nest of noodles and top with the baked salmon. Garnish with extra coriander or chilli flakes if desired.
