A naturally sugar-free chai latte with the warm spices of cinnamon, cardamom, and ginger. Enjoy hot in winter or chilled over ice in summer. Keeps well in the fridge for 3–4 days.

Ingredients
- 2 cinnamon sticks
- 8 cardamom pods
- 15 black peppercorns
- 6 whole cloves
- 3 star anise
- 1-2 bay leaves
- 1 thumb fresh ginger (sliced)
- 1000 ml milk or unsweetened soy milk
- 4 black tea bags
Method
- In a small frying pan, heat the cinnamon, cardamom, peppercorns, cloves, star anise and bay leaves over medium heat for 1–2 minutes until fragrant.
- Remove from the heat and transfer to a medium saucepan.
- Add the milk and bring to a gentle simmer.
- Simmer for 2 minutes, then turn off the heat and add the tea bags.
- Allow to steep for 5 minutes, then remove the tea bags.
- Strain and serve hot, or cool and refrigerate for at least 30 minutes for a cold version.
- Serve over ice if desired.
