Ingredients
- 4 Ryvitas (crispbreads)
- 1/2 ripe avocado
- 2 tbsp frozen edamame beans (depodded)
- 1/2 lemon zest (from 1/2 lemon)
- 1/2 lemon juice (from 1/2 lemon)
- chilli flakes (a pinch, to taste)
- 2 tsp sesame seeds (toasted)
- salt and freshly ground black pepper (to taste)
Method
- Cook the edamame beans according to packet instructions (typically boil for 2–3 minutes). Drain and set aside.
- In a small bowl, mash the avocado with a fork.
- Add the cooked edamame, lemon zest, lemon juice, salt, and pepper. Stir until combined but still textured.
- Spread the avocado-edamame mixture evenly over the 4 Ryvitas.
- Sprinkle with toasted sesame seeds and chilli flakes.
- Serve immediately and enjoy.
