Ingredients

  • 4 Ryvitas (crispbreads)
  • 1/2 ripe avocado
  • 2 tbsp frozen edamame beans (depodded)
  • 1/2 lemon zest (from 1/2 lemon)
  • 1/2 lemon juice (from 1/2 lemon)
  • chilli flakes (a pinch, to taste)
  • 2 tsp sesame seeds (toasted)
  • salt and freshly ground black pepper (to taste)

Method

  1. Cook the edamame beans according to packet instructions (typically boil for 2–3 minutes). Drain and set aside.
  2. In a small bowl, mash the avocado with a fork.
  3. Add the cooked edamame, lemon zest, lemon juice, salt, and pepper. Stir until combined but still textured.
  4. Spread the avocado-edamame mixture evenly over the 4 Ryvitas.
  5. Sprinkle with toasted sesame seeds and chilli flakes.
  6. Serve immediately and enjoy.
