Ingredients

  • 4 Ryvitas (crispbreads)
  • 1 hard-boiled egg (peeled)
  • 1 tbsp cottage cheese
  • 1 tbsp lite cream cheese
  • 1 tsp white vinegar
  • 1/2 tsp Dijon mustard
  • 1/4 tsp mustard powder
  • 1/4 tsp curry powder
  • paprika (a sprinkle)
  • 1 tsp chives (finely chopped)
  • salt and freshly ground black pepper (to taste)

Method

  1. In a small bowl, mash the hard-boiled egg with a fork.
  2. Add cottage cheese, lite cream cheese, white vinegar, Dijon mustard, mustard powder, curry powder, and a pinch of salt and pepper.
  3. Stir until well combined. Adjust seasoning to taste.
  4. Spread the egg mixture evenly over the 4 Ryvitas.
  5. Sprinkle with paprika and chopped chives.
  6. Serve immediately and enjoy.
