Ingredients
- 4 Ryvitas (crispbreads)
- 1 hard-boiled egg (peeled)
- 1 tbsp cottage cheese
- 1 tbsp lite cream cheese
- 1 tsp white vinegar
- 1/2 tsp Dijon mustard
- 1/4 tsp mustard powder
- 1/4 tsp curry powder
- paprika (a sprinkle)
- 1 tsp chives (finely chopped)
- salt and freshly ground black pepper (to taste)
Method
- In a small bowl, mash the hard-boiled egg with a fork.
- Add cottage cheese, lite cream cheese, white vinegar, Dijon mustard, mustard powder, curry powder, and a pinch of salt and pepper.
- Stir until well combined. Adjust seasoning to taste.
- Spread the egg mixture evenly over the 4 Ryvitas.
- Sprinkle with paprika and chopped chives.
- Serve immediately and enjoy.
