Ingredients
- 500 g mixed variety tomatoes (e.g., heritage and cherry varieties)
- 125 g cherry bocconcini (drained)
- 10-12 fresh basil leaves
- 1 tbsp extra virgin olive oil
- salt and pepper (to taste)
Method
- Slice the heritage tomatoes into 0.5 cm rounds and arrange on the base of a serving dish.
- Slice the cherry tomatoes into halves or thirds and place in the gaps between the larger slices.
- Drain the bocconcini and scatter over the tomatoes.
- Drizzle with olive oil, top with basil leaves, and season with salt and pepper before serving.
