Ingredients

  • 500 g mixed variety tomatoes (e.g., heritage and cherry varieties)
  • 125 g cherry bocconcini (drained)
  • 10-12 fresh basil leaves
  • 1 tbsp extra virgin olive oil
  • salt and pepper (to taste)

Method

  1. Slice the heritage tomatoes into 0.5 cm rounds and arrange on the base of a serving dish.
  2. Slice the cherry tomatoes into halves or thirds and place in the gaps between the larger slices.
  3. Drain the bocconcini and scatter over the tomatoes.
  4. Drizzle with olive oil, top with basil leaves, and season with salt and pepper before serving.
