This fun and healthy “apple donut” recipe uses fresh apple slices as a base and has a generous topping of crunchy nuts, chocolate and freeze dried raspberries for added texture. It’s low in sugar and high in fiber, making it great for a diabetes-friendly snack or a creative dessert. These are best enjoyed fresh but can be refrigerated for up to 2 hours.

Ingredients

  • 1 apple (medium sized, approx. 180g)
  • 2 tbsp natural peanut butter (no added sugar or salt)
  • 1 tbsp mixed nuts (unsalted, finely chopped)
  • 1 tsp freeze-dried raspberries (crushed)
  • 15 g dark chocolate (85%, chopped or shaved)

Method

  1. Slice the apple into rings about 5mm thick and remove the seeds.
  2. Add a thin layer of peanut butter on each apple ring.
  3. Sprinkle each ring with some chopped nuts, freeze-dried raspberries, and dark chocolate.
