If you’re looking for a decadent dessert that’s rich and creamy but that’s not going to cause large spikes in your blood sugar level, then this Chocolate Mousse will do just the job. It contains silken tofu which increases the protein content and creates a lovely smooth texture, just like regular mousse.

With just a handful of ingredients, this recipe is fuss free yet super delicious.

Ingredients

  • 100 g dark chocolate (70% cocoa or higher)
  • 300 g silken tofu
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • pinch salt
  • optional toppings (fresh berries, chopped pistachios and/or dark chocolate)

Method

  1. Break the dark chocolate into pieces and melt gently over a pan of simmering water using a heatproof bowl (ensure the bowl doesn’t touch the water).
  2. Add silken tofu, maple syrup, vanilla extract, and salt to a food processor or blender.
  3. Pour in the melted chocolate and blend until completely smooth. Scrape down the sides and blend again if needed for a silky finish.
  4. Spoon the mousse into 3 glasses, jars, or bowls. Serve immediately for a soft texture, or refrigerate for 1–2 hours to set and thicken.
  5. Top with berries, chopped nuts, or extra chocolate before serving, if desired.
